Bobotie
This recipe was sent to me by my mom’s cousin Lou. Due to supply issues I left out the raisins / apples / almonds but added extra chutney. It still came out delicious.
500 g (18 oz) of ground beef
75 g (3 oz) seedless raisins
1 slice of bread crumbed and soaked in:
- 20 g (1 oz) sugar
- 150 ml (½ cup) milk
- 25 ml (1 oz) vinegar
1 large diced onion
10 ml (1 tablespoon) salt
1 clove of garlic, crushed
Pinch of pepper
25 ml (1 oz) cooking oil
3 bay leaves
5 g (1 tablespoon) curry powder
75 g (3 oz) peeled sliced almonds
50 g (2 oz) dried apple rings
2 eggs
75 g (3 oz) dried apricots
300 ml (1 cup) milk
HOW:
- Soak apple rings, apricots and raisins overnight. Then dice apples and apricots.
- Mix minced meat and soaked bread.
- Sautee onions and garlic in heated oil.
- Add curry powder to onion/garlic mix.
- Add all the ingredients to the meat, except for the last 4
- Mix well and put in greased ovenproof dish.
- Embed bay leaves randomly in between and bake 40 minutes at 140 C (275 F)
- Remove baked dish, sprinkle almonds on top and cover it with the beaten egg / milk mix.
- Bake for 15 more minutes at 160 C (325 F).
